Savory beef and rice stuffed cabbage rolls, simmered in tomato soup for a delicious Polish-inspired dish.
Ingredients:
  • 0.66666668653488 cup water
  • 0.33333334326744 cup uncooked white rice
  • 8 cabbage leaves
  • 1 pound lean ground beef
  • 0.25 cup chopped onion
  • 1 egg, slightly beaten
  • 1 (10.5 ounce) can condensed tomato soup, divided
Instructions:
  • In a saucepan, bring water and rice to a gentle boil. Cover, reduce heat to low, and simmer for about 20 minutes until the rice is tender and has absorbed all the liquid.
  • While you wait, let's get a large saucepan of lightly salted water boiling. Toss in the cabbage leaves and cook until softened, which should take about 2 to 4 minutes. Drain them when they're ready.
  • Mix together ground beef, cooked rice, onion, egg, tomato soup, salt, and pepper in a large bowl until well combined.
  • Place a generous 2 tablespoons of the savory beef mixture onto each cabbage leaf. Fold one end of the leaf over the filling, rolling it up and tucking in the sides to secure the delicious contents inside.
  • In a large skillet over medium heat, arrange the cabbage rolls and pour the remaining tomato soup over them. Cover and bring to a boil, then reduce the heat to low and simmer for about 40 minutes, stirring and basting frequently with the liquid.
