Ingredients:
  • 1 small onion, chopped
  • 2 slices leg ham, chopped
  • 1 red capsicum, seeded and chopped
  • 80ml olive oil
  • 99.00 gm prepared basil pesto
  • 40.00 ml pitted black olives, chopped
  • 4 chicken breast fillets
  • 75g plain flour
  • Salt & black pepper
Instructions:
  • Sauté onion, ham, and capsicum in a drizzle of olive oil over medium heat for 5 minutes until onion is tender. Transfer to a bowl and stir in pesto and olives until combined.
  • Make a deep pocket in the thick part of the chicken breast fillets and stuff each with a quarter of the mixture before securing with toothpicks. Dust with seasoned flour.
  • In a large frying pan over medium heat, cook the chicken fillets in the remaining oil until they are golden and cooked through, about 15 minutes.
  • Cut chicken into 3 pieces and accompany with fresh salad greens or steamed vegetables.
