Indulge in a delectable sub sandwich combining chicken Parmesan and cordon bleu flavors for a satisfying meal.
Ingredients:
  • 2 skinless, boneless chicken breast halves
  • 2 cups Italian-style salad dressing
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1.5 cups milk
  • 1 egg
  • 3 cups Italian-seasoned bread crumbs
  • 2 tablespoons butter, divided, or as needed
  • 10 slices prosciutto, chopped into chunks
  • 4 cups marinara sauce
  • canola oil as needed
  • 1 cup shredded mozzarella cheese, or more to taste
  • 4 Italian sub rolls
  • 8 slices provolone cheese
  • 1 cup grated Parmesan cheese
Instructions:
  • Butterfly each chicken breast to create 4 cutlets. Sandwich each between plastic wrap and gently pound to 1/2-inch thickness using a meat mallet.
  • Let chicken breasts soak in zesty Italian dressing in the fridge overnight for maximum flavor.
  • Allow the chicken to sit out at room temperature for 1 hour before cooking.
  • In separate bowls, mix the flour and baking powder, combine the milk and egg, and place the bread crumbs in another bowl. Keep aside.
  • Warm up a generous tablespoon of butter in a skillet over medium heat. Sear the prosciutto in the sizzling butter until it turns golden brown, approximately 5 minutes. Place on a paper towel-covered plate to drain.
  • Simmer marinara sauce in a saucepan until heated through.
  • Preheat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C) and preheat the oven to 450 degrees F (230 degrees C).
  • Place chicken cutlets flat and fill each with a strip of mozzarella cheese and prosciutto. Fold the cutlets in half over the filling and fasten the edges with toothpicks.
  • Coat rolled chicken in flour, then egg, and finish with bread crumbs.
  • Fry the chicken until golden and cooked through, about 6 to 7 minutes or until it floats and is no longer pink in the center. Drain on paper towels to remove excess grease.
  • Slice the sub rolls in half and generously spread butter inside. Create the sandwiches by layering in this order: bottom half of the sub, chicken cutlet, marinara sauce, provolone cheese, Parmesan cheese, and top half of the sub. Place the assembled sandwiches onto a baking pan.
  • Bake in the preheated oven until the bread is crispy and the cheeses are melted, approximately 2 minutes. Serve while hot.
