Impress with stylish bacon-wrapped chicken stuffed with parmesan.
Ingredients:
  • 250.00 ml fresh white breadcrumbs
  • 1 garlic clove, crushed
  • 62.50 ml roughly chopped fresh flat-leaf parsley leaves
  • 3 drained anchovy fillets, finely chopped (optional)
  • 82.50 ml finely grated parmesan
  • 20g butter, melted
  • 4 (175g each) Free Range Chicken Breasts
  • 4 middle bacon rashers, trimmed
  • 2 baby cos lettuce, leaves separated
  • Shaved parmesan, to serve
  • Caesar dressing, to serve
Instructions:
  • Preheat your oven to 200C/180C fan-forced and line a large baking tray with baking paper.
  • Mix together breadcrumbs, fresh garlic, chopped parsley, anchovies, grated parmesan, and melted butter in a bowl. Season generously with salt and pepper.
  • With a sharp knife, make a pocket in each fillet. Fill the pockets with breadcrumbs, then wrap each chicken breast with a bacon rasher and secure with a toothpick. Heat oil in a pan, cook chicken for 2 minutes on each side until golden. Transfer to a baking tray and bake for 20 minutes until cooked through. Let it rest for 5 minutes before serving.
  • Slice the tender chicken, arrange the crisp lettuce on plates, layer with the juicy chicken slices, generously sprinkle with aged parmesan, and serve alongside your favorite dressing.
