Create adorable jack-o'-lantern stuffed peppers by carving faces into orange or yellow peppers. Perfect for Halloween dinner!
Ingredients:
  • 6 bell peppers, any color
  • 1 pound ground beef
  • 4 slices whole wheat bread, cubed
  • 1 small onion, chopped
  • 1 small tomato, diced
  • 2 cloves garlic, minced
  • 0.5 cup chili sauce
  • 0.25 cup prepared yellow mustard
  • 3 tablespoons Worcestershire sauce
  • 0.25 teaspoon pepper
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare an 8x8-inch baking dish by greasing it.
  • Gently combine ground beef, egg, bread cubes, onion, tomato, garlic, chili sauce, mustard, Worcestershire sauce, salt, and pepper in a bowl.
  • Prepare the peppers by washing them and carefully carving jack-o'-lantern faces with triangle eyes, noses, and pointy-teeth smiles. Remove the tops, scoop out the seeds and cores, then lightly stuff them with beef filling. Arrange the peppers in a baking dish so they support each other.
  • Roast in the preheated oven until the peppers are tender and the stuffing is cooked through and juicy, approximately 1 hour.
