Lighter, flavorful Stuffed Pasta Shells makeover - a delicious family favorite with less fat. Give it a try for a tasty, healthier meal the whole family will love!
Ingredients:
  • 16 uncooked jumbo pasta shells
  • 1/2 lb lean ground turkey
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon fennel seed
  • 1/4 teaspoon pepper
  • 2 cups sliced fresh mushrooms
  • 4 cloves garlic, finely chopped
  • 1 cup fat-free cottage cheese
  • 1/4 cup fat-free egg product
  • 2 cups tomato pasta sauce
  • 1/4 cup shredded Parmesan cheese
Instructions:
  • Preheat oven to 350°F. Cook pasta according to package instructions, then drain without adding salt.
  • Cook the turkey with Italian seasoning, fennel, salt, and pepper in a 10-inch nonstick skillet over medium heat for 8 to 10 minutes, stirring occasionally until the turkey is no longer pink. Remove the turkey mixture from the skillet.
  • In the same skillet, sauté mushrooms, onion, and garlic over medium heat for 6 to 8 minutes until vegetables are tender. Mix in the turkey, cottage cheese, and egg product.
  • Prepare the 13x9-inch (3-quart) glass baking dish by lightly spraying it with cooking spray. Fill each pasta shell with approximately 1 tablespoon of the turkey mixture, then arrange them in the baking dish. Drizzle the pasta sauce over the shells.
  • Cover the dish with foil and bake for 20 to 25 minutes until it's heated through. Finish by sprinkling with Parmesan cheese for a delicious finishing touch.
