Taco-stuffed pasta shells with your favorite salsa for a delicious fusion twist.
Ingredients:
  • 16 jumbo pasta shells
  • 1 (1.25 ounce) package taco seasoning mix
  • 1 cup water
  • 1 (16 ounce) can refried beans
  • 0.75 cup shredded Cheddar cheese
  • 1 (16 ounce) jar salsa, divided
  • 0.25 cup sliced green onion
  • 0.25 cup shredded Cheddar cheese
  • 0.5 cup sour cream
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C).
  • - Bring a large pot of water to a vigorous boil. - Add the shell pasta and wait for it to return to a boil. - Cook the pasta uncovered until slightly firm to the bite, for about 13 minutes. - Drain thoroughly before using.
  • In a large skillet, cook ground beef until browned, then drain excess fat. Mix in taco seasoning and water, simmer until thickened. Stir in refried beans and 3/4 cup of Cheddar cheese. Spoon the flavorful mix into the pasta shells.
  • Spread a quarter cup of salsa evenly on the bottom of a 9x13 inch baking dish. Place the filled shells on top of the salsa and finish by spooning the remaining salsa over the shells.
  • After baking for 40 minutes, sprinkle with sliced green onions and 1/4 cup shredded Cheddar cheese. Serve with sour cream.
