Spice up your twice-baked potatoes with zesty salsa verde, Anaheim pepper, and leftover turkey filling.
Ingredients:
  • 4 medium potatoes
  • 0.75 cup shredded or cubed cooked turkey
  • 0.75 cup green salsa
  • 1 lightly packed fresh cilantro (leaves and tender stems)
  • 0.5 cup sour cream, or more to taste
  • 2 tablespoons cream cheese, softened
  • 2 tablespoons butter, softened
  • 4 tablespoons shredded Mexican cheese blend, or to taste
Instructions:
  • Preheat your oven to 450 degrees F (230 degrees C) and poke potatoes all over with a fork before placing them on a baking sheet.
  • Bake in the preheated oven until potatoes are fork-tender, for about 50 minutes to 1 hour. Remove and let cool slightly while keeping the oven on.
  • Combine the turkey, salsa, and chile pepper in a bowl.
  • Slice the top of each potato and scoop out the inside. Mash the potato in a bowl. Mix in turkey-salsa, sour cream, cream cheese, butter, salt, and pepper until your preferred consistency is reached. Stuff the potatoes with the mixture and sprinkle Mexican cheese on top.
  • Bake in the oven until warmed, approximately 15 minutes.
