Stuffed Stockings

Santa's stocking stuffers: Raspberry and chocolate-filled Christmas treats.
Ingredients:
  • 1 cup sugar
  • 3/4 cup butter or margarine, softened
  • 3/4 cup shortening
  • 1 teaspoon grated orange peel
  • 2 eggs
  • 3 3/4 cups Gold Medal™ all-purpose flour
  • 3/4 cup miniature semisweet chocolate chips
  • 1/2 cup raspberry jam
  • Favorite frosting, if desired
Instructions:
  • Combine sugar, butter, shortening, orange peel, and eggs in a large bowl until well mixed. Gently fold in the flour. Divide the dough into thirds, then chill in the refrigerator for at least 1 hour, but no more than 24 hours.
  • Preheat oven to 350°F. Roll out each portion of dough into a 12x9 inch rectangle on a lightly floured surface. Cut each rectangle into twelve 3-inch squares. Combine chocolate chips and jam. Spread 1 teaspoon of the jam mixture down the center of each square. Fold two opposite sides over the filling and pinch to seal. Then, seal the ends and gently shape into a rope before bending into a stocking shape. Arrange 2 inches apart on an ungreased cookie sheet.
  • Bake for 15-20 minutes until edges are lightly browned. Transfer to wire rack to cool completely, then decorate with frosting.
