Elevate your roast dinner with a delicious and flavorful minced pork stuffing.
Ingredients:
  • 2 large onions
  • 50 g stale bread
  • 200 g vac-packed chestnuts
  • 1 kg higher-welfare shoulder of pork trimmed, diced
  • 1 bunch of fresh sage (30g)
  • 3 rashers of higher-welfare smoked streaky bacon
  • 1 whole fresh nutmeg for grating
  • 1 lemon
  • 1 orange or clementine
Instructions:
  • Preheat the oven to 190ºC/375ºF/gas 5. In a food processor, finely chop the onions and transfer them to a large bowl. Make breadcrumbs by blending stale bread, then add them to the bowl along with crushed chestnuts. Combine diced pork, sage leaves, chopped bacon, white pepper, sea salt, grated nutmeg, lemon zest, and orange or clementine zest in the food processor. Pulse until mixture has some texture, then add it to the bowl. Season well with salt and pepper and mix until combined. Reserve some stuffing for turkey and transfer the rest to a baking dish. Flatten it and bake for 50 minutes to 1 hour until crispy. Remove excess fat before serving. Enjoy the tender and crispy stuffing!
