Delicious casserole loaded with seasoned beef, crispy potatoes, and zesty olives, pickles, and pimentos, baked to perfection.
Ingredients:
  • 2 (6 ounce) packages dry bread stuffing mix
  • 1.5 pounds lean ground beef
  • 0.5 cup chopped onions
  • 0.25 teaspoon chopped garlic
  • 3 large potatoes, chopped
  • 1 tablespoon vegetable oil
  • 0.5 teaspoon ground black pepper
  • salt to taste
  • 2 (4 ounce) jars chopped pimento peppers
  • 0.5 cup chopped black olives
  • 0.25 cup sweet pickles, finely chopped
  • 0.25 cup dill pickles, diced
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and lightly grease a 9x13 inch baking dish.
  • Follow the instructions on the package to prepare the stuffing.
  • In a large saucepan over medium-low heat, cook ground beef, onions, and garlic until onions are soft and beef is evenly browned. Drain and set aside.
  • In a large, deep skillet, cook potatoes with oil over low heat, stirring occasionally for about 10 minutes until they are evenly golden brown and tender yet firm.
  • Combine the stuffing, ground beef, potatoes, pepper, salt, pimento peppers, olives, sweet pickles, and dill pickles in the baking dish.
  • Bake in the oven for 30 minutes until hot. Serve and enjoy.
