Delicious sweet ketchup-glazed meatloaf, made with stuffing mix. Simple, family-friendly meal for any weeknight.
Ingredients:
  • 1 pound ground beef
  • 2 cups ketchup
  • 1 large onion, diced
  • 1 (6 ounce) package dry bread stuffing mix
  • 1 large egg
  • 0.5 cup ketchup
  • 1 tablespoon brown sugar
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and generously grease a 9x5-inch loaf pan.
  • Mix together the beef, 2 cups of ketchup, onion, stuffing mix, and egg in a large bowl by hand.
  • Combine 1/2 cup ketchup and mustard powder in a small bowl, stirring until the glaze is smooth.
  • Spread the beef mixture into a greased loaf pan. Brush the top with the glaze and sprinkle with brown sugar.
  • Cook in the oven until the center is no longer pink, about 35-40 minutes or until an instant-read thermometer inserted in the center reads at least 160°F (70°C).
