Turkey meatloaf muffins made with ground turkey, stuffing mix, buttermilk, and broth - perfect for a delicious Thanksgiving side.
Ingredients:
  • cooking spray
  • 20 ounces 99% fat-free ground turkey
  • 1 (6 ounce) package stuffing mix (such as Kraft® Stove Top®)
  • 1 cup low-sodium chicken broth
  • 2 tablespoons buttermilk
  • 2 tablespoons Italian seasoning
  • salt and ground black pepper to taste
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C and generously spray a 12-cup muffin tin with cooking spray.
  • In a bowl, mix together turkey, stuffing mix, chicken broth, buttermilk, Italian seasoning, salt, and pepper. Spoon the mixture into the muffin cups evenly.
  • Bake in the preheated oven for about 25 minutes or until the internal temperature reaches at least 165 degrees F (74 degrees C).
