Buttermilk pudding with spiced cherries

Decadent spiced cherry buttermilk pudding.
Ingredients:
  • 1 vanilla bean, halved lengthways
  • 500ml buttermilk
  • 230.00g caster sugar
  • 7.50 gm gelatine powder
  • 2 cinnamon sticks
  • 3 star anise (optional)
  • 400g cherries
Instructions:
  • Extract the flavorful vanilla seeds and combine them in a saucepan with buttermilk and sugar. Heat gently over low flame to melt the sugar without boiling. Dissolve gelatine in 1 tablespoon of boiling water and swiftly whisk into the warm buttermilk mixture. Allow it to cool, whisk periodically, then pour into 4 x 1/2 cup (125ml) dariole moulds and chill in the refrigerator overnight.
  • In a saucepan, combine the extra sugar, 3/4 cup (185ml) water, cinnamon, and star anise. Bring to a boil until the sugar dissolves. Remove from heat, stir in the cherries, and allow to cool.
  • Unmold the puddings onto serving plates by briefly dipping the base in hot water. Accompany with the spiced cherries.
