Chocolate waffle pudding

Impress everyone with this innovative and delicious twist on a classic pudding recipe.
Ingredients:
  • 12 (200g pkt) frozen waffles, cut into triangles
  • 100g dark chocolate, roughly chopped
  • 3 eggs, whisked
  • 60g caster sugar
  • 375ml milk
  • 250ml buttermilk
  • 4.40 gm vanilla essence
  • Icing sugar, to dust
  • Vanilla ice cream, to serve
Instructions:
  • Preheat your oven to 160°C and lightly grease a 22cm square ovenproof dish.
  • Place the waffles in the prepared dish and generously sprinkle with the chocolate.
  • In a large jug, vigorously whisk together eggs, sugar, milk, buttermilk, and vanilla essence until fully incorporated. Pour half of the mixture over the waffles and let it rest for 5 minutes before pouring the remaining mixture over them.
  • Place the dish in a large roasting pan and fill with boiling water halfway up the sides. Bake for roughly 50 minutes until the custard is just set. Let it rest for 5 minutes, then dust with icing sugar and serve with ice cream if desired.
