Buttermilk brined turkey: tender and flavorful perfection.
Ingredients:
  • 2 cups water
  • 0.33333334326744 cup kosher salt
  • 2 tablespoons dried parsley
  • 2 tablespoons coriander seeds
  • 1 tablespoon whole black peppercorns
  • 1 tablespoon mustard seed
  • 1 teaspoon garlic powder
  • 2 large bay leaves
  • 8 cups buttermilk
  • 1 (12 pound) whole turkey, neck and giblets removed
  • 2 tablespoons unsalted butter
Instructions:
  • In a large stockpot, bring water, salt, parsley, coriander, peppercorns, mustard seeds, garlic powder, and bay leaves to a boil until salt dissolves, approximately 2 minutes. Allow to cool for 15 minutes before stirring in buttermilk.
  • Gently wash the turkey with cold water, then transfer it to a brining bag. Pour the buttermilk brine over the turkey and refrigerate for 24 hours, rotating periodically.
  • Pour out the brine and rinse the turkey in cold water well. Pat dry the turkey with paper towels and lay it breast side up in a roasting pan. Massage butter onto the skin and allow the turkey to rest for 1 hour.
  • Preheat your oven to 350°F (175°C) for the perfect cooking temperature.
  • Roast the turkey until a thermometer reads 165 degrees F (74 degrees C) near the bone, approximately 3 hours.
