Ingredients:
  • 60g butter
  • 45g icing sugar
  • 1 tsp vanilla bean paste
  • 1 egg yolk
  • 75g plain flour
  • 75g self-raising flour
  • Caster sugar, to dust
Instructions:
  • Preheat your oven to 180°C and line an oven tray with baking paper.
  • With an electric mixer, blend butter and powdered sugar until light and creamy. Mix in vanilla bean paste and egg yolk until just combined. Add the combined flours and stir until the mixture comes together. Transfer the dough to a lightly floured surface and gently knead until smooth.
  • On a lightly floured surface, roll out the dough to a 3mm-thick disc. Use a 7cm round fluted pastry cutter to cut out discs and transfer them to a lined tray. Use a straw and small heart-shaped cutters to create a doily pattern in each disc. Re-roll any dough scraps to make more biscuits. Bake in a preheated oven for 10 minutes until lightly golden. Sprinkle with caster sugar after removing from the oven. Allow the biscuits to cool completely on the tray before storing them in an airtight container.
