Zesty orange-infused sugar snap peas - a refreshing side dish.
Ingredients:
  • 300g sugar snap peas, topped
  • 18.20 gm olive oil
  • 21.00 gm fresh orange juice
  • 1 tsp finely grated orange rind
  • 35g (1/3 cup) flaked almonds, toasted
  • 20.00 ml chopped fresh dill
Instructions:
  • Boil the sugar snap peas in salted water until vibrant green and crisp-tender, about 2-3 minutes. Then, drain and place them back in the saucepan.
  • Combine the oil, orange juice, and orange rind in a small bowl and whisk until well mixed.
  • Combine the dressing, almonds, and dill with the sugar snap peas. Season with salt and pepper, toss until evenly coated, then transfer to a serving dish.
