Gift-worthy shortbread recipe featuring dried cherries and mini chocolate chips.
Ingredients:
  • 1/2 cup granulated sugar
  • 1 tablespoon granulated sugar
  • 1 cup butter, softened
  • 1/2 cup powdered sugar
  • 2 1/2 cups all-purpose flour
  • 1/8 teaspoon salt
  • 1/4 cup miniature semisweet chocolate chips
  • 1/4 cup finely chopped dried cherries
  • 1 teaspoon vanilla
Instructions:
  • Preheat the oven to 325°F. Line an 8-inch square pan with foil, allowing some overhang on opposite sides. Grease the foil with shortening and sprinkle evenly with 1 tablespoon of granulated sugar.
  • Cream butter in a large bowl using an electric mixer until creamy; add powdered sugar and beat well. In a separate medium bowl, combine flour and salt, then gradually add to the butter mixture, beating until well blended. Stir in chocolate chips, cherries, and vanilla. Press the dough into a pan.
  • Bake for 40 minutes or until golden. Let it cool in the pan for 30 minutes until slightly warm. Use foil to easily lift shortbread out of the pan. Cut into 64 squares with a sharp knife. Dip the shortbread squares into 1/2 cup of granulated sugar.
