Classic Italian tomato sauce: fresh and flavorful.
Ingredients:
  • 2 large tomatoes
  • 2 tablespoons olive oil
  • 2 cloves garlic, crushed
  • 0.5 teaspoon salt
  • 4 large basil leaves, chopped
Instructions:
  • Bring a pot of water to a boil. Quickly blanch tomatoes for about 1 minute until skins start to split. Transfer tomatoes to ice water to cool rapidly. Peel off the skins, chop into chunks, and blend in a food processor until smooth.
  • In a saucepan over medium heat, sauté garlic in oil until fragrant without browning, about 1-2 minutes. Stir in blended tomatoes and salt, then simmer until sauce thickens, 10-15 minutes. Remove from heat, add basil, and let sit briefly for flavors to meld.
