Sumac lamb with tomato bread salad

Whip up a quick and effortless dinner with just six ingredients in no time.
Ingredients:
  • 2 tsp sumac
  • 75.08 gm extra-virgin olive oil
  • 200g crusty Italian bread, cut into 2cm pieces
  • 8 lamb loin chops
  • 250g cherry tomatoes, halved
  • 125.00 ml fresh basil leaves, torn
  • 20.00 ml red wine vinegar
Instructions:
  • In a hot skillet, sauté bread in 1 tablespoon of oil until golden and crisp, approximately 5 minutes. Transfer to a bowl.
  • In a bowl, combine chops with 1 tablespoon of oil and sumac. Season generously with salt and pepper, then mix well. Heat a barbecue plate or chargrill over medium-high heat. Grill chops for 4 minutes on each side for a medium doneness or until cooked as desired. Transfer the chops to a plate, cover with foil, and let them rest for 4 minutes before serving.
  • Add ripe tomatoes and fresh basil to the bread. Gently drizzle with vinegar and the remaining aromatic oil. Mix everything together to ensure all flavors are well combined. Let it sit for 3 minutes to fully develop the delicious flavors. Serve the succulent chops alongside the flavorful tomato mixture.
