Summer Berry Waffle Trifle

Irresistible summer trifle: homemade waffles layered with creamy filling and fresh fruit.
Ingredients:
  • 2 cups Original Bisquick™ mix
  • 1 1/3 cups milk
  • 1 teaspoon vanilla
  • 1 pint (2 cups) whipping cream, chilled
  • 1 package (8 oz) cream cheese, softened
  • 1 1/2 cups powdered sugar
  • 1 pint (2 cups) fresh strawberries, sliced
  • 1/2 pint (1 cup) fresh blackberries
  • 1/2 pint (1 cup) fresh raspberries
  • Powdered sugar for dusting
Instructions:
  • Preheat the waffle maker and lightly grease it with vegetable oil. In a large bowl, mix all waffle ingredients until well combined. Pour the recommended amount of batter into the hot waffle maker, close the lid, and cook for about 5 minutes or until steaming subsides. Gently transfer the waffle to a plate and allow it to cool.
  • Once the waffle has cooled down, use a large chef's knife to cut one quarter of it for garnish. Proceed to cut the rest of the waffles into pieces.
  • In a cool bowl, whip the heavy cream using an electric mixer on high speed until stiff peaks form.
  • In a spacious bowl, whip cream cheese and 1 1/2 cups of powdered sugar with an electric mixer on high speed. Mix in 1 teaspoon of vanilla until smooth. Gently fold in whipped cream using a rubber spatula.
  • Layer waffle pieces in the bottom of a 3 1/2-quart glass trifle bowl. Spread half of the Filling over the waffle pieces. Set aside 4 to 6 berries for garnish and place the rest on top of the Filling.
  • Place the rest of the Filling in the middle of the berries. Add the saved waffle piece and berries on top. Sprinkle with powdered sugar. Chill until serving and store in the fridge.
