Fresh and vibrant couscous salad with tomatoes, red onion, green onion, and cucumber.
Ingredients:
  • 0.5 cup chicken broth
  • 0.5 cup couscous
  • 2 tablespoons olive oil
  • 8 cherry tomatoes, quartered
  • 0.25 red onion, diced
  • 2 green onions, chopped
  • 0.25 cup seeded, diced cucumber
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lemon juice
  • salt and ground black pepper to taste
Instructions:
  • In a small saucepan, gently warm the chicken broth over medium heat until it is on the verge of boiling.
  • In a bowl, combine couscous with warm chicken broth and 2 tablespoons of olive oil. Add tomatoes, red onion, green onions, cucumber, parsley, and lemon juice. Cover with plastic wrap and let it steam for 5 minutes. Uncover, fluff couscous with a fork, mix in the vegetables, and season with salt and pepper before serving.
