Summer Grilled Shrimp Salad

"Summer-perfect grilled shrimp salad with sweet and smoky shrimp, mixed greens, and cilantro vinaigrette."
Ingredients:
  • 1 tablespoon olive oil
  • 2.25 teaspoons smokehouse maple seasoning (such as McCormick® Grill Mates®)
  • 1.5 teaspoons lemon juice
  • 12 ounces peeled and deveined shrimp
  • 0.25 cup extra-virgin olive oil
  • 2 tablespoons honey
  • 2 tablespoons fresh lime juice
  • 2 tablespoons chopped cilantro
  • 1 tablespoon balsamic vinegar
  • 4 cups mixed salad greens, or more to taste
  • 0.5 cup thinly sliced English cucumber
  • 0.33333334326744 cup freshly cooked corn
  • 0.5 cup diced tomato
  • 0.25 cup sliced red onion
  • 1 avocado, diced
Instructions:
  • In a glass bowl, mix together olive oil, maple seasoning, and lemon juice. Add shrimp and give them a good toss to coat evenly. Refrigerate until it's time to grill.
  • Combine olive oil, honey, lime juice, cilantro, balsamic vinegar, salt, and pepper in a small bowl and whisk to create a flavorful vinaigrette. Let vinaigrette sit aside for later use.
  • Preheat a grill to medium-high heat. Skewer the shrimp and grill until they turn pink and opaque, around 2 minutes per side. Remove from skewers and set aside.
  • Layer mixed greens in a large salad bowl, arranging cucumber, corn, tomato, red onion, and avocado on top in sections. Place grilled shrimp in the center. Drizzle with vinaigrette, toss, and serve promptly.
