Create a refreshing and vibrant alcohol-free party punch using fresh fruits.
Ingredients:
  • 1 star anise
  • 107.50 gm caster sugar
  • 82.50 gm water
  • 525.00 gm pineapple juice
  • 250.00 ml chilled sparkling mineral water
  • 125g raspberries
  • 120g blueberries
  • 100g seedless green grapes, halved
  • 100g seedless red grapes, halved
  • 1 mango, peeled, sliced
  • 2 kiwifruits, peeled, cut into wedges
  • 1 small red apple, sliced crossways
  • 125.00 ml fresh mint sprigs
  • Ice cubes, to serve
  • Lemon slices, to serve
Instructions:
  • In a small saucepan, combine star anise, 1/3 cup sugar, and 1/3 cup water. Heat over medium and stir for 2 minutes until the sugar dissolves. Remove from heat and transfer to a large bowl. Mix in pineapple juice and mineral water.
  • In a large jug, combine fruit, half of the mint, and ice. Pour the juice mixture on top. Serve the punch with lemon slices and garnish with the remaining mint.
