Savor a refreshing summer pasta salad for a satisfying Meat-free Monday meal.
Ingredients:
  • 375g dried spiral pasta
  • 36.40 gm olive oil
  • 250g cherry tomatoes, quartered
  • 180g tub baby bocconcini, drained, quartered
  • 82.50 ml barchetta olives (see note)
  • 62.50 ml pine nuts, toasted
  • 165.00 ml shredded fresh basil leaves
Instructions:
  • Boil pasta in a large saucepan of salted water according to package instructions until tender. Drain and return to the pan.
  • Drizzle oil over pasta and mix well until coated. Gently fold in tomatoes, bocconcini, olives, pine nuts, and 1/2 cup of fresh basil, ensuring everything is evenly combined.
  • Divide the pasta into bowls, sprinkle with the remaining basil, season with pepper, and serve.
