Indulge in this cheesy southern squash casserole, a cherished family recipe that rivals any mac and cheese.
Ingredients:
  • 1.5 tablespoons butter, divided
  • 3 summer squash, trimmed and cut into bite-size pieces
  • 3 zucchini, trimmed and cut into bite-size pieces
  • 3 onions, chopped
  • 1 pound shredded sharp white Cheddar cheese
  • 0.5 pound shredded Cheddar cheese
  • 3 tablespoons sweetened condensed milk, divided
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease a 9x9-inch baking dish with 1/2 tablespoon of butter.
  • In a large cast-iron skillet over medium heat, melt the remaining 1 tablespoon of butter. Cook the summer squash and zucchini until the pieces begin to brown, about 10 to 15 minutes, stirring frequently. Spread the mixture evenly in the prepared baking dish, season with salt and black pepper, then sprinkle with about 1/3 of the chopped onions.
  • Combine the white Cheddar cheese and yellow Cheddar cheese in a bowl until fully mixed. Sprinkle 1/2 cup of the cheese blend over the onions. Drizzle about 1 tablespoon of sweetened condensed milk. Repeat layering cheese, onions, and milk two more times, then finish with the remaining cheese mixture.
  • Bake until the casserole turns golden brown and the onions become tender, approximately 30 minutes in the preheated oven.
