Grilled Summer Squash and Red Onion seasoned with cumin and seasoned salt - a flavorful side dish perfect for outdoor cooking. Great with zucchini too!
Ingredients:
  • 2 tablespoons olive oil
  • 1/2 teaspoon peppered seasoned salt
  • 1/4 teaspoon ground cumin
  • 1/2 medium red onion, quartered
  • 2 medium yellow summer squash, halved, cut into 1/2-inch-thick slices
Instructions:
  • Preheat gas or charcoal grill. In a large bowl, combine oil, peppered seasoned salt, and cumin. Add onion and toss until coated.
  • Once the grill is hot, use a slotted spoon to transfer the onion to the grill basket (also known as a grill "wok"). Keep the oil mixture in the bowl for coating the squash later. Place the basket on a gas grill over medium heat or charcoal grill over medium coals. Grill for 10 minutes, remembering to turn the basket every so often.
  • Toss summer squash in reserved oil mixture in a bowl until coated.
  • Add the squash and onion to the basket and continue cooking for 5 to 7 minutes, occasionally turning the basket, until the vegetables are tender.
