Indulge in flaky puff pastry filled with juicy fruit and caramel, paired perfectly with a scoop of ice cream for the ultimate dessert contrast.
Ingredients:
  • 1 vanilla pod
  • 100 g golden caster sugar
  • 600 g large ripe strawberries
  • 1 x 320 g pack of ready-rolled all-butter puff pastry
  • 70 ml Pimm's
  • vanilla ice cream to serve
Instructions:
  • 1. Preheat the oven to 220ºC/425ºF/gas 7. 2. Split the vanilla pod and scrape the seeds into a medium non-stick ovenproof frying pan on medium heat with the pod, Pimm's, and sugar until a thick, golden caramel forms. 3. Remove from heat and hull the strawberries into the pan. 4. Lay the pastry over the strawberries, tuck the edges inside the pan, and trim off any excess. 5. Bake in the oven for 25 minutes until golden and puffed up. 6. Carefully turn the tart onto a plate or board and cut into 6 slices. 7. Serve with scoops of vanilla ice cream.
