Ingredients:
  • 120g (2/3 cup) drained sun-dried tomatoes, roughly chopped
  • 62.50 ml fresh continental parsley leaves
  • 40.00 ml drained capers
  • 21.00 gm fresh lime juice
  • 20.00 ml fresh oregano leaves
  • 2 garlic cloves, chopped
  • 60mls (1/4 cup) olive oil
  • Sun-dried tomato oil (from the jar), or olive oil
Instructions:
  • Combine sun-dried tomatoes, parsley, capers, lime juice, oregano, and garlic in a food processor and blend until smooth.
  • While the food processor is running, slowly drizzle in the olive oil, making sure to scrape down the sides of the bowl as needed, until the mixture is nearly smooth. Season with salt and pepper. Transfer the mixture to an airtight container, top with a thin layer of sun-dried tomato oil or olive oil, and refrigerate until ready to use.
