Japanese cucumber salad with sweet and tangy vinaigrette for a refreshing taste.
Ingredients:
  • 2 large cucumbers, peeled
  • 0.33333334326744 cup rice vinegar
  • 4 teaspoons white sugar
  • 1.5 teaspoons minced fresh ginger root
Instructions:
  • Halve the cucumbers lengthwise and remove large seeds. Slice thinly crosswise.
  • In a small bowl, combine vinegar, sugar, ginger, and salt. Mix thoroughly. Add cucumber slices and toss to coat evenly. Chill in the fridge for at least 1 hour before serving.
