Quick and easy Asian pickled cucumbers with rice vinegar, soy sauce, and sesame oil marinade.
Ingredients:
  • 1 pound Persian cucumbers, thinly sliced
  • 1 teaspoon salt
  • 0.66666668653488 cup rice vinegar
  • 0.25 cup white sugar
  • 1 teaspoon sesame oil
  • 2 tablespoons sesame seeds
Instructions:
  • In a bowl, combine Persian cucumbers with salt, mixing thoroughly. Allow the cucumbers to rest for 10 minutes until they release their juices. Squeeze out excess liquid from the cucumbers and drain.
  • Combine rice vinegar, white sugar, soy sauce, and sesame oil in a bowl and whisk until the sugar dissolves. Pour the mixture over the cucumbers and let them marinate for 30 minutes. Finally, sprinkle sesame seeds on top to garnish before serving.
