Sunshine Coast-Style Nanaimo Bars

Elevate the classic Nanaimo bar with a luscious coconut-custard middle layer bursting with juicy blackberries.
Ingredients:
  • 0.5 cup butter
  • 0.25 cup white sugar
  • 5 tablespoons unsweetened cocoa powder
  • 2 teaspoons vanilla extract
  • 1.5 cups graham cracker crumbs
  • 1 cup shredded coconut
  • 0.33333334326744 cup butter at room temperature
  • 3 tablespoons custard powder (such as Bird's® Custard Powder)
  • 0.25 cup milk
  • 3 cups confectioners' sugar
  • 0.25 cup blackberries
  • 12 (1 ounce) squares semisweet chocolate
  • 2 tablespoons butter
Instructions:
  • In a saucepan, gently melt 1/2 cup of butter over low heat. Stir in the sugar and cocoa powder until smooth. Add the egg and vanilla extract, then remove from heat. Fold in the graham cracker crumbs, coconut, and walnuts until fully mixed. Press the mixture into a 9x9-inch square pan and chill in the fridge for approximately 1 hour.
  • Combine room temperature butter in a mixing bowl with custard powder and milk until smooth. Gradually mix in confectioners' sugar, incorporating one cup at a time until no lumps remain. Gently fold in blackberries. Spread the creamy mixture onto the chilled crust evenly and refrigerate for a minimum of 30 minutes to set.
  • In a saucepan over very low heat, gently melt the chocolate and 2 tablespoons of butter together, stirring until smooth. Take off the heat and generously pour the melted chocolate mixture over the filling layer, ensuring an even coverage. Chill in the refrigerator until firm, approximately 30 minutes. For neat squares, slice using a sharp knife dipped in boiling water.
