Delicious Swedish Cardamom Buns filled with almond paste and topped with whipped cream, a traditional treat perfect for any time of year.
Ingredients:
  • 5 cups all-purpose flour
  • 0.5 cup white sugar
  • 4 teaspoons baking powder
  • 0.5 teaspoon salt
  • 1.5 cups almond milk (heated to 82 degrees F (28 degrees C))
  • 0.66666668653488 cup butter, melted
  • 1 (.25 ounce) package active dry yeast
  • 1 teaspoon ground cardamom
  • 0.5 cup milk
  • 5 ounces almond paste, grated
  • 2 cups heavy whipping cream
  • 2 tablespoons white sugar
  • 2 tablespoons confectioners' sugar, or to taste
Instructions:
  • Combine flour, 1/2 cup sugar, baking powder, and salt in a bowl, stirring until well mixed.
  • In a bowl, blend together warm milk and melted butter. Add yeast, stirring until fully dissolved. Incorporate eggs and cardamom. Mix in flour until fully combined. Cover with a clean towel and allow it to rise for 1 hour.
  • Gently deflate the dough and form 20 balls. Place them on parchment-lined baking sheets. Cover with a towel and let them rise for approximately 45 minutes.
  • Preheat your oven to 375°F (190°C) for the perfect cooking temperature.
  • Bake until beautifully golden for approximately 14 minutes, then cool on a wire rack for about 20 minutes.
  • Trim 1/2 inch off the top of each bun to create a 'lid,' then carefully hollow out the center with a fork. Set the tops aside and place the cores in a large bowl.
  • Drizzle milk over cores to moisten them. Blend in almond paste until smooth. Gradually incorporate more milk until filling reaches a thick pudding consistency. Fill buns' centers with almond paste filling.
  • In a large bowl, whisk together heavy cream and 2 tablespoons of sugar until stiff peaks form using an electric mixer.
  • Generously top buns with whipped cream, place the 'lids' on top, then dust with confectioners' sugar using a sifter.
