Try this quick and flavorful roasted okra dish, infused with Indian spices for a convenient weeknight meal.
Ingredients:
  • cooking spray
  • 12 ounces frozen chopped okra
  • 1 medium onion, chopped
  • 2 tablespoons canola oil
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon ground ginger
  • 0.5 teaspoon ground turmeric
  • 0.5 teaspoon curry powder
  • 0.25 teaspoon paprika
  • salt to taste
  • 0.5 teaspoon dried cilantro
Instructions:
  • Preheat the oven to 425°F (220°C). Cover a rimmed baking sheet with aluminum foil and lightly coat with cooking spray.
  • Spread frozen okra and onion on the baking sheet, then generously drizzle with canola oil. In a bowl, mix onion powder, garlic powder, ginger, turmeric, curry powder, paprika, and salt. Sprinkle this flavorful seasoning over the vegetables and toss well to ensure they are coated evenly.
  • Roast in the oven until tender for about 34 minutes. Remove and sprinkle with fresh cilantro before serving.
