Nutrient-packed chocolate chip cookies with chia seeds, flax seeds, walnuts, and cocoa nibs for added flavor and texture.
Ingredients:
  • 1 cup packed brown sugar
  • 1 cup coconut sugar
  • 0.5 cup butter, softened
  • 0.5 cup coconut oil
  • 2 teaspoons vanilla extract
  • 2 teaspoons hot water
  • 0.5 teaspoon cream of tartar
  • 3 cups all-purpose flour
  • 1 cup dark chocolate chips (such as Ghirardelli® 60% Cacao)
  • 0.5 cup chopped walnuts
  • 0.25 cup chia seeds
  • 0.25 cup ground flax seeds
  • 0.25 cup cocoa nibs
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and prep a baking sheet with parchment paper.
  • Using an electric mixer, blend brown sugar, coconut sugar, butter, and coconut oil in a large bowl until smooth. Gradually add one egg at a time to the creamed mixture, making sure each is fully incorporated before adding the next. Mix in vanilla extract with the final egg.
  • Combine hot water and baking soda in a small bowl, stirring until baking soda is dissolved. Mix into butter mixture, then add cream of tartar and mix thoroughly.
  • Combine flour with the butter mixture until a smooth dough forms; gently incorporate walnuts, chia seeds, flax seeds, cocoa nibs, and salt. Use rounded tablespoons to drop the dough onto the baking sheet.
  • Bake the cookies in the preheated oven until lightly browned around the edges, approximately 12 minutes. Then, transfer them to a wire rack to cool.
