Spiced shortbread trees

Spread festive joy with homemade baked treats for Christmas gifts.
Ingredients:
  • 250g butter, chilled, chopped
  • 112.50 gm icing sugar mixture, sifted
  • 332.50 ml plain flour, sifted
  • 42.90 gm rice flour, sifted
  • 2.50 gm ground cinnamon
  • 1/2 tsp allspice
  • 1/4 tsp ground cloves
  • Green food colouring
  • Pink food colouring
Instructions:
  • Preheat your oven to 160°C/140°C fan-forced and prepare 2 baking trays with baking paper.
  • Combine butter, icing sugar, plain flour, rice flour, cinnamon, allspice, and cloves in a food processor until dough forms. Transfer dough to a floured surface and gently knead until smooth. Shape into a disc, cover with plastic wrap, and refrigerate for 1 hour until firm.
  • Roll the dough evenly to 5mm thickness between 2 sheets of baking paper. Use a 7.5cm tree-shaped cookie cutter to cut out shapes. Re-roll scraps and cut to make 36 trees. Arrange the trees 2cm apart on trays. Chill in the freezer for 10 minutes until firm. Bake until golden, typically 22-25 minutes.
  • Place 1/4 cup caster sugar in a snap-lock bag and add 4 drops of green food colouring. Seal the bag and shake well, scrunching with your hands to evenly distribute the color. Repeat the process with the remaining sugar and pink food colouring.
  • Place the trees on trays and cool them for 5 minutes. Lightly brush the trees with 1 tablespoon of cold water using a pastry brush. Sprinkle half of the trees with green sugar and the rest with pink sugar. Let them cool completely on a wire rack.
