Effortless healthy green salad with apple cider mustard dressing.
Ingredients:
  • 2 baby cos lettuces, quartered lengthways
  • 2 avocados, cut into wedges
  • 2 Granny Smith apples, very thinly sliced into rounds
  • 75g goat’s cheese, crumbled
  • 62.50 ml pine nuts, toasted, roughly chopped
  • 62.50 ml fresh flat-leaf parsley leaves
  • 36.40 gm extra virgin olive oil
  • 30.00 ml apple cider vinegar
  • 14.40 gm honey
  • 11.80 gm dijon mustard
Instructions:
  • For the apple cider and mustard dressing, simply combine all ingredients in a small bowl, season to taste, and whisk until fully blended.
  • Place vibrant green lettuce, ripe avocado, and crisp apple slices in an enticing display on a serving platter. Generously sprinkle with your favorite cheese, crunchy nuts, and fragrant parsley. Finish with a drizzle of your preferred dressing. Present and enjoy the delicious combination.
