Satisfying chicken and wild rice casserole with a medley of vegetables - perfect for finicky eaters.
Ingredients:
  • 2 medium carrots, diced
  • 3 cups chopped cooked chicken
  • 1 (6.0 ounce) package UNCLE BEN'S® Long Grain & Wild Rice Original Recipe
  • 1 (8 ounce) package fresh mushrooms, chopped
  • 0.5 medium onion, diced
  • 1 cup fresh or frozen peas, thawed
  • 1 cup packed fresh spinach, chopped
  • 2.5 cups chicken broth
  • 1 (10.75 ounce) can reduced fat condensed cream of mushroom soup
  • 1 cup shredded Cheddar cheese
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and grease a 9x13-inch baking dish with a touch of oil.
  • In a microwave-safe bowl, place the carrots and add 1 tablespoon of water. Cover the bowl tightly with plastic wrap, poking holes to vent. Microwave on High for 1 minute, then drain the carrots.
  • In a bowl, mix together chicken, rice, seasoning packet, carrots, mushrooms, onion, peas, and spinach. Add broth and soup, stirring until well combined. Transfer mixture to a baking dish, cover with foil, and get ready to enjoy a delicious meal!
  • Cover and bake for 45 minutes. Uncover and continue baking until hot and bubbling, approximately 45 more minutes. Sprinkle shredded cheese on top just before serving.
