Indulge in a heavenly pavlova cloud that will brighten your day.
Ingredients:
  • 6 egg whites
  • 322.50 gm caster sugar
  • 5.00 gm cornflour
  • 4.40 gm vanilla extract
  • 1 tsp white vinegar
  • 300ml tub thickened cream
  • 250g strawberries, hulled, sliced
  • 1 banana, sliced
  • 2 passionfruit, halved
Instructions:
  • Preheat the oven to 120C/100C fan-forced. Trace a 20cm circle on a sheet of baking paper using a pencil and then place the paper, pencil-side down, on a baking tray.
  • With an electric mixer, whip egg whites until stiff peaks form. Slowly add sugar, a tablespoon at a time, ensuring sugar dissolves with each addition. Mix in cornflour, vanilla, and vinegar. Beat for 30 seconds. Dollop meringue onto a lined tray, shaping it into a circle using a spatula for smooth edges.
  • Bake for 1 1/2 hours until set but not browned. Switch off the oven. Allow to cool in the oven with the door slightly open for 1 hour and then completely cool at room temperature.
  • Whip cream with an electric mixer until firm peaks form. Spoon onto pavlova, then garnish with strawberries and banana. Finish with a drizzle of passionfruit and serve.
