Delicious and simple mini pies bursting with flavor.
Ingredients:
  • 200g roast chicken, chopped
  • 425g can Mexe Beans, rinsed, drained
  • 60g roasted red capsicum, cut into thin strips
  • 40.00 ml chopped fresh coriander
  • 3 green shallots, chopped
  • 100g grated 4 cheese melt
  • 485g packet Fajita Kit
  • 60ml (1/4 cup) vegetable oil
  • 2 tomatoes, cut into wedges
  • 1 avocado, cut into wedges
  • Sour cream, to serve (optional)
Instructions:
  • Combine chicken, beans, capsicum, coriander, green shallot, half of the cheese, 2 tablespoons mild Mexican salsa, and 1 tablespoon fajita spice mix in a bowl. Mix well and divide into 8 portions.
  • 1. Microwave 2 tortillas on High for 20 seconds to make them soft and pliable. 2. Spoon a portion of the chicken mixture onto the center of each tortilla. 3. Fold the edges inward, overlapping to seal the filling inside. 4. Gently press down to flatten. 5. Place the folded side down on a tray and repeat with the rest of the tortillas and filling.
  • In a non-stick frying pan, heat the oil. Cook the pies in batches with the seam side down for 1 minute, flip and cook for another minute until golden brown and crispy. Drain on paper towel.
  • 1. Preheat the oven grill to high. 2. Arrange the cooked pies on a baking tray and sprinkle with the remaining cheese. 3. Grill for 1-2 minutes until the pies are golden and the cheese is melted. 4. Serve with tomato, avocado, the rest of the salsa, and sour cream, if desired.
