Blueberry superfood muffins with whole wheat flour, oats, walnuts, and Greek yogurt.
Ingredients:
  • 1.5 cups whole wheat flour
  • 0.5 cup oats
  • 0.5 cup brown sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 0.75 cup applesauce
  • 6 ounces Greek yogurt
  • 0.25 cup skim milk
  • 3 tablespoons vegetable oil
  • 2 tablespoons skim milk, or as needed
  • 1 cup blueberries, or more to taste
  • 0.66666668653488 cup coarsely chopped walnuts
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare the muffin tin by greasing or lining it with paper liners.
  • In a large bowl, mix together flour, oats, brown sugar, baking powder, and salt. Add applesauce, yogurt, 1/4 cup skim milk, vegetable oil, and egg. If needed, add extra milk 1 tablespoon at a time until the batter resembles thick oatmeal.
  • Gently mix in the blueberries and walnuts, then fill the muffin cups almost to the top with the batter.
  • Bake until a toothpick inserted in the center comes out clean, approximately 15-20 minutes in a preheated oven.
