Grill up a delicious Aussie classic: prawns on the barbie!
Ingredients:
  • Vegetable oil, for deep frying
  • 1kg potatoes, peeled, cut into 1cm thick chips
  • 36.40 gm olive oil
  • 10.00 gm mild paprika
  • 20.00 ml grated lemon rind
  • 4 x 230g beef scotch fillet steaks
  • 16 raw peeled tail on prawns
  • 200g mayonnaise
  • 40.00 ml chopped fresh dill
  • Mixed salad leaves, to serve
Instructions:
  • Heat oil in a medium saucepan to 180°C (test readiness with a cube of bread turning golden in 20 seconds). Fry fries in batches for 4 minutes or until golden and crispy. Remove and let drain on paper towel.
  • In a bowl, mix together oil, paprika, and lemon zest. Season with salt and pepper, then add beef and prawns, tossing until coated.
  • Preheat a large frying pan over medium-high heat. Sear beef for 2 minutes on each side or until desired doneness. Place on a plate, cover, and let rest for 5 minutes. In the same pan, add prawns and cook for 2 minutes on each side until just cooked through.
  • In a small bowl, mix mayonnaise and dill. Divide hot chips, beef, and salad among plates. Top beef with prawns, and serve with the mayonnaise mixture and lemon wedges.
