Whimsical cupcakes perfect for kids, simple and quick to make.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
  • Water, vegetable oil and eggs called for on cake mix box
  • 1 1/2 cups marshmallows from Lucky Charms™ cereal
  • Rainbow candy sprinkles, if desired
  • 1 tub (12 oz) Betty Crocker™ Whipped Fluffy White Frosting
  • Green food color
Instructions:
  • Preheat oven to 350°F (325°F for dark or nonstick pans) and line 24 regular-size muffin cups with paper baking cups.
  • Prepare the cake batter following the instructions on the box. Divide the batter evenly among muffin cups, filling them about two-thirds full. Bake for approximately 20 minutes or until the cupcakes spring back when touched in the center. Let them cool in the pans for 10 minutes, then transfer them to a cooling rack to cool completely for about 30 minutes.
  • With a serrated knife, hollow out the center of each cupcake about 1 inch deep, saving the removed cake. Fill each cupcake with 1 tablespoon of Lucky Charms™ marshmallows (around 10 pieces) and a sprinkle of rainbow candy sprinkles. Trim the saved cake to be flat, then use it to cover the filled cupcakes.
  • Place the frosting in a medium bowl and mix in the food color until you achieve the perfect green shade. Put the colored frosting into a decorating bag with a large star tip and pipe it onto the cupcakes. Alternatively, use an offset spatula to frost the cupcakes. Finish by sprinkling rainbow candy sprinkles on top as a garnish.
  • Cover your cupcakes loosely with plastic wrap and store them at room temperature.
