Surprise-Inside Valentine's Cupcakes

Surprise cookie heart cupcakes - a sweet treat for Valentine's Day!
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
  • 1/3 cup butter, softened
  • 3 tablespoons Gold Medal™ all-purpose flour
  • 1 box Betty Crocker™ Delights Super Moist™ Red Velvet Cake Mix
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 eggs
  • 1 jar (7 oz) marshmallow creme
  • 1 cup butter, softened
  • 1 to 2 tablespoons milk
  • 3 cups powdered sugar
Instructions:
  • Preheat oven to 375°F. Mix Heart Cookie ingredients in a medium bowl until a soft dough forms. Roll out the dough to 1/4 inch thickness on a floured surface. Use a 1-inch heart-shaped cookie cutter to make at least 92 cookies. Arrange the cookies 1 inch apart on an ungreased cookie sheet.
  • Bake for 7 to 9 minutes or until edges are set. Let cool on the cookie sheet for 1 minute, then transfer to cooling racks to cool completely, approximately 15 minutes.
  • Preheat oven to 350°F and line 24 regular-size muffin cups with paper baking cups. In a large bowl, mix cupcake ingredients on low speed for 30 seconds, then increase to medium speed for 2 minutes, scraping the bowl occasionally until the batter is slightly lumpy.
  • Fill each paper baking cup with 2 level tablespoons of cake batter. Insert a row of 3 heart cookies in the center of each cup, positioning them upright in the batter. Mark the front of each cupcake for reference. Spoon 1 heaping tablespoon of the remaining cake batter over the heart cookies in each cup without toppling them.
  • Bake cupcakes for 22 to 27 minutes until a toothpick inserted in the center comes out clean. Let them cool in the pan for 10 minutes, then transfer to a cooling rack. Allow to cool completely for about 1 hour.
  • In a large bowl, use an electric mixer on medium speed to blend marshmallow creme, 1 cup softened butter, and 1 tablespoon of milk until smooth. Gradually mix in powdered sugar. Add milk, 1 teaspoon at a time, until the frosting is fluffy and spreadable. Pipe or spread the frosting onto the cupcakes.
  • Top each cupcake with a heart-shaped cookie, making sure the front of the cookie faces the front of the cupcake for a beautiful presentation and easy serving guidance.
