Get inspired with this creative lunch box idea for a delicious meal on-the-go!
Ingredients:
  • 1/2 ripe avocado, peeled, mashed
  • 10.60 gm lime juice
  • 6 slices wholemeal or white bread, crusts removed
  • 40.00 gm spreadable cream cheese
  • 1 Lebanese cucumber, thinly sliced into ribbons
  • 100g can red salmon, drained, flaked
  • 1/2 nori sheet, cut into 1cm-thick strips
Instructions:
  • In a small bowl, mix ripe avocado with fresh lime juice. Season with a pinch of salt and pepper. Taste and adjust seasoning as needed.
  • Lay the bread slices out neatly. Evenly spread cream cheese on each slice. Spread avocado over most of the slices, leaving a 2cm border on one side.
  • Lay the cucumber and salmon at the edge of the bread. Roll the bread tightly around the filling. Secure by wrapping a sheet of nori around the rolled bread and lightly moistening the edge. Finally, wrap in plastic wrap and pack it in your lunch box.
