Swede, potato and bacon gratin

Indulge in a mouthwatering bacon and potato gratin with cheesy swede.
Ingredients:
  • 4 bacon rashers, coarsely chopped
  • 1 large swede, peeled, thinly sliced
  • 4 large potatoes, thinly sliced
  • 1 brown onion, thinly sliced
  • 1 garlic clove, thinly sliced
  • 6 thyme sprigs
  • 2 tsp coarsely chopped rosemary
  • 300ml thickened cream
  • 125ml chicken stock
  • 60g tasty cheese
  • Thyme sprigs, extra, to serve
Instructions:
  • Preheat your oven to 180C and generously grease a 6-cup (1.5L) ovenproof dish.
  • Fry bacon in a medium pan over medium heat, stirring occasionally, until it turns golden brown, about 5 minutes.
  • Create a flavorful base by arranging swede, potato, onion, garlic, thyme, rosemary, and bacon in the dish. Mix cream and stock, season well, and pour evenly over the layered potatoes.
  • Bake for 50 minutes to 1 hour until the potato and swede are tender and the gratin is golden brown. Sprinkle with cheddar and bake for an additional 15 minutes until golden brown. Allow to cool slightly for 5 minutes before serving.
