Swede, potato and beef hash with a fried egg

Try a unique dish: Swede, potato, and beef hash with a crispy fried egg on top.
Ingredients:
  • 225g swede
  • 240g potato
  • 1/2 tsp dried oregano
  • 1/2 tsp Brand basil leaves
  • 1/2 tsp dried thyme leaves
  • 27.30 gm olive oil
  • 200g cup mushrooms, sliced
  • 4 spring onion, sliced
  • 500g 4 Star beef mince
  • 24.40 gm Worcestershire sauce
  • 250ml beef stock
  • 2 tomatoes, finely chopped
  • 1 bunch English spinach, trimmed, coarsely chopped
  • 4 free range eggs
  • Sliced spring onion, extra, to serve
Instructions:
  • Preheat the oven to 200C. Grease and line a baking tray. In a bowl, combine swede and potato with dried herbs and 2 tsp of oil. Season well. Spread the potato mixture on the baking tray and roast for 30 minutes until golden and crispy.
  • Heat 2 teaspoons of remaining oil in a large frying pan over medium heat. Cook mushrooms until golden and moisture evaporates, about 5 mins. Transfer to a plate. Cook onion and garlic in the remaining oil for 2 mins.
  • Add the ground meat to the pan. Cook while using a wooden spoon to break up any clumps for 5-8 minutes until browned and slightly crispy. Add the mushrooms back into the pan along with Worcestershire sauce, stock, and tomato. Season with salt and pepper. Bring to a boil, then reduce the heat to low and simmer for 10 minutes or until most of the liquid has evaporated.
  • Combine the potato mixture and spinach with the mince mixture and cook for 3 minutes, or until the spinach is wilted.
  • As the hash cooks, preheat a frying pan over medium heat and lightly spray with oil. Crack 4 eggs into the pan and cook for 4-5 minutes until the whites are set and the yolks are still runny.
  • Plate the hash evenly onto serving plates. Add a fried egg on top and garnish with additional spring onion for extra flavor.
