Indulge in crispy potato fans with buttery breadcrumbs and Parmesan topping.
Ingredients:
  • 24 small white potatoes (1 1/2 pounds)
  • 6 tablespoons butter or margarine, melted
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup Progresso™ dry bread crumbs (any flavor)
  • Paprika
Instructions:
  • Preheat your oven to 325°F and generously grease a 13x9x2 inch rectangular baking dish.
  • Make 1/8-inch crosswise cuts into the potatoes, leaving the bottom intact. Arrange them in a dish cut side up. Brush generously with butter and season with salt and pepper.
  • Bake for 1 hour, brushing with butter occasionally. Combine cheese and bread crumbs, then sprinkle over potatoes. Finish with a sprinkle of paprika and continue baking for 20-30 minutes until tender.
