Enhanced Swedish meatballs recipe with a secret twist. Quick and irresistible devoured in no time.
Ingredients:
  • 1 lb. (80/20) ground beef
  • 1 lb. ground pork
  • 1 cup panko
  • 3/4 cup finely chopped white onion (from 1 medium onion)
  • 1/4 cup whole milk
  • 2 large cloves garlic, minced (1 Tbsp.)
  • 1 1/2 tsp. kosher salt, plus more to taste
  • 1/2 tsp. black pepper
  • 1/2 tsp. ground nutmeg
  • 1 large egg
  • 2 Tbsp. olive oil
  • 2 Tbsp. unsalted butter
  • 1/4 cup all-purpose flour
  • 2 1/2 cups beef stock
  • 1 Tbsp. Worcestershire sauce
  • 1 tsp. Dijon mustard
  • 1 tsp. dill pickle juice (optional)
Instructions:
  • Prepare the meatballs: In a large bowl, mix ground beef, ground pork, onion, garlic, milk, egg, panko breadcrumbs, salt, and pepper. Lightly combine the ingredients with your hands. Shape the mixture into 1 1/2-inch balls (approximately 2 tablespoons each) and set them on a large plate.
  • Sear the meatballs: In a large cast iron or heavy-bottomed skillet over medium heat, heat olive oil. Add half of the meatballs and cook with tongs until browned on all sides, about 8 minutes. Transfer browned meatballs to a plate and repeat with the remaining meatballs. Keep the browned bits in the skillet for extra flavor in the sauce.
  • Prepare the sauce: In the same skillet over medium heat, melt the butter. Add the flour and whisk continuously until golden brown for 1 to 2 minutes. While whisking, gradually pour in the beef stock and cream. Increase heat to medium-high and keep whisking until the sauce gently simmers. Stir in the Worcestershire sauce, mustard, and pickle juice. Season to taste with more salt, if desired.
  • Place the browned meatballs back into the skillet with the sauce over medium heat. Simmer for 5 to 7 minutes, stirring occasionally, until the meatballs are fully cooked and the sauce thickens enough to coat the back of a spoon. Serve hot and enjoy!
